Wine Warehouse Corporation, the exclusive importer of Vittoria Coffee in the Philippines, needed to elevate the coffee quality across their entire client portfolio — including some of Manila's most recognized hospitality venues: New World Hotel, Fairmont & Raffles Hotel, Manila House Private Club, Blackbird, Sala Restaurant, Sala Bistro, People's Palace, and Market Place by Rustan's Rockwell.
Each venue had different equipment configurations, varying staff skill levels, and inconsistent coffee preparation standards. The guests at these venues expected world-class quality, but the barista teams had never received structured, professional-grade training aligned to international competition standards.
The program needed to work simultaneously across all 8-venues, with each receiving dedicated weekly sessions — a logistics and quality challenge that required meticulous scheduling and a curriculum that could adapt to different equipment setups while maintaining consistent standards.

A comprehensive 8-week training program was designed that progressed from foundational coffee knowledge through professional espresso extraction, milk techniques, workflow management, and culminated in a certification examination.
"The goal wasn't just to teach people how to make coffee. It was to build barista professionals who could execute consistently under pressure, communicate with guests confidently, and maintain standards independently after the training ended."
Each venue received a dedicated 3-hour session per week, scheduled across Mondays through Saturdays to accommodate all 8 locations. Before the training program began, an on-site calibration session was conducted at each venue to optimize the espresso machine, grinder settings, and workflow layout for Vittoria Coffee's specific blends.
